The Bollini story began in 1979, when Neil and Maria Empson decided to create their own label in the Alpine foothills of Friuli and Trentino. Their goal was to showcase the excellence and consistency of international varieties grown in the cool northeastern regions, while keeping the prices affordable. Choice hillside locations, ideal day/night temperature swings, and the complexity and minerality that come from the soil, all contribute to achieving concentrated, highly extracted fruit.

Vineyard Characteristics
Hillside vineyards along the Adige River, located about 213-425 meters (700-1400 feet) above sea level, south/southwestern exposure and alluvial, gravelly soils that is rich in minerals; density is about 4,000-5,000 vines per hectare.
Vinification and Aging
The hand-picked grapes are packed in 18kg crates and taken for soft pressing. The must is clarified thanks to a natural sedimentation process. After racking, select yeasts are added; temperature-controlled fermentation takes place at 14-16° C (57.2-60.8° F). Aged on fine lees for about 4-5 months, with weekly bâtonnage. This helps maintain freshness and persistence, and is instrumental in developing complex aromas.
